Payload is the whole decision

An iPhone 15 Pro in a thin case weighs about 210 g. Add a DJI Mic Mini receiver and a cold-shoe clamp and it passes 260 g, which is where the X3 motors start to complain on a tilt. The V3 has margin for that. A phone plus a light plus a receiver is M6 or M7 territory. Every other feature on the box matters less than staying under the motor limit, because an overloaded gimbal drifts and drains its battery fighting itself.

Why the AI tracker matters on a stream

Most phone gimbals track a face through the camera app, which means the gimbal app has to be the app running. Streaming apps like Moblin and IRL Pro are not gimbal apps, so app-based tracking stops working the moment you go live. The V3 and V3 Ultra clip a separate tracker with its own camera onto the gimbal, and the M6 and M7 build it in. That is the feature that turns a gimbal into a camera operator for a solo streamer.
